Paco is now the third generation to run the farm.
Although he studied forestry engineering in Córdoba and currently lives there with his own family, he has been gradually taking over from his father since 2020.
Paco has a broader vision of agriculture and how to relate to the land and people. His grandfather worked with respect for the land, and his father’s era was one of agricultural intensification. Paco started with organic asparagus, then moved on to olive trees, and now wants to continue with almond trees. He cultivates two hectares of asparagus, one of which is organic. Green and purple asparagus are harvested twice a year, 400-500 kg in spring and a smaller amount in October. Everything is done by hand with the help of workers from the colonial village of Algallarín.
Paco’s dream is to leave the screens behind, move to his village with his family and devote himself to working in the fields, as he combines his work as an engineer with farming. His scientific interest has also led him to have a research plot, where he searches for more resilient varieties in collaboration with agricultural technicians.
